Salty Snack Pairings
Serves 6-8

Top row: Watermelon feta bites, smoked salmon blinis, gildas
Bottom row: Anchovy & butter on toasts, hot chorizo, crisps
These snacks are delightfully salty, balancing out the sweetness of the cocktails. None of them take longer than 10 minutes to assemble and they all look great laid out on a nice platter!
Watermelon & feta bites
Cut the feta into cubes and then cut the watermelon into cubes the same size as the feta. Arrange on a plate in a checkerboard pattern and garnish with basil leaves.
Smoked salmon blinis
Toast the blinis in the oven (it’s with it to crisp them up slightly) and then layer smoked salmon, a dollop of sour cream and fish roe. We like cods roe as the giant orange pearls go pop in your mouth in little salty bursts.
Gildas
In a layered pattern like a mini kebab skewer pitted green olives, anchovies and guindilla peppers on a cocktail stick. The more advanced technique is to weave them around eachother, but feel free to just cut up the elements into skewerable sizes.
Anchovy & butter on toasts
Pop some good quality sourdough into the toaster and toast until just golden brown. Leave it in the toaster to cool and dry out a little more. When cool, thickly slather on some room temperature salted butter and cut into soldiers. Lie one anchovy fillet (buy the best quality you can) on the soldier.
Hot chorizo
The simplest recipe ever, slice up a chorizo into ½ cm thick slices and gently heat in a frying pan until slightly crisp and the oil is running out. You can slice the chorizo in advance so all you need to do is pop it in a frying pan.
And finally… Crisps!
No more need be said, you can’t go wrong with a bag of crisps and cocktails!
