Count Negroni’s PX Punch

The perfect festive aperitif

Enjoy the rich, complex flavours of this wintery twist on the classic Negroni.
This punch combines the deep, Christmas pudding hit of Pedro Ximénez
sherry with the bright, citrusy taste of blood orange and bitter Campari
makingit a perfect choice for winter gatherings.

Ingredients 
200 ml Bathtub Gin
100 ml Campari
100 ml sweet vermouth
50 ml Pedro Ximénez sherry
500 ml blood orange soda, chilled
Star anise
Ice

To create star anise ice cubes, fill an ice cube tray
with ice and add a couple of star anise to each
compartment then freeze overnight.

Combine the gin, Campari, sweet vermouth and
Pedro Ximénez sherry in a large punch bowl or pitcher.
Stir well to ensure all the ingredients are mixed and let
sit in the fridge for a few hours at least to meld.

Just before serving, add ice then top with chilled blood
orange soda to the punch, stirring gently to combine.
